This morning Ben and I got a chance to do some baking together. Actually, he's been sitting at the bar sounding out words for me while I bake up a batch of his favorite "graham crackers." He cleaned the bowl for me. : )
These are really easy and turn out sortof like a cross between a cookie and a cracker. Just sweet enough to seem like a cookie. Healthy enough for a snack.
They're best tasting and best-for-you if you use fresh-ground wheat. But any whole wheat flour will do. I like red wheat the best. It tastes more "wheaty."
If you grind your own, 4 cups of wheat equals approx. 6 cups of flour.
I like recipes that use a lot of regular stuff that I already have...
As you can see, we have a lot of "big" stuff. Gotta love Sam's club!
Here's the recipe...
MIX dry ingredients:
6 Cups whole wheat flour
1 1/2 Cups rolled oats
1 C. brown sugar
2 t. salt
2 t. baking soda
3 T cinnamon
MIX wet ingredients:
1 1/2 C. oil
3/4 C. honey
1 C cold water
1 t vanilla
Mix them together.
Then spread the mixture onto 2 greased 10x15 cookie sheets. It's easiest to do if you spread out the crumbles like this.
Then press them down evenly with your fingers.
Like this...
Bake @ 400 degrees for 15-18 minutes, switching racks halfway through.
As soon as they are done, take them out and cut them into squares with a sharp knife, while they're hot.
Then let them cool in the pans.
They'll get a little crispier as they cool.
Store in air-tight container or freeze.
Makes around 96 squares.
