Fresh Homemade Salsa!


Tomatoes & Peppers & Cilantro, Oh My!
This is one of the best things about summer.  Food wise, anyways!


My family just ate three quarts in less than 24 hours, and the only reason they stopped is the fact that we ran out of chips!  It only took six bags...

It's a great way to use up all that wonderful garden produce... without cooking!

So, what's in it?

Whatever you want!


Mine is a big bunch of fresh-from-the-garden tomatoes,

a couple onions (I usually use purple, but they were grossly neglected and moldy in the "bottom drawer"),

a couple jalapeno peppers (with seeds removed),

a couple green peppers,

and a big bunch of fresh cilantro.  I'm in love with cilantro.  But I can't seem to grow it.  So I just buy it... regularly.

Oh, and I also like salt and a little cumin.  I sometimes add fresh garlic or just garlic salt.  If you like it hotter, use the hot pepper seeds, too, or just splash in some hot sauce.

(Wear gloves when you're chopping up hot peppers!)


Just mix it all up, taste it, add a little more of whatever you think of, mix again and chow down.

That's just mine, for right now.  It may change based on what's growing.  I had a bunch of those weird little yellow tomatoes to use up, so they're in there, too.

We sometimes add in a can of rinsed black beans and call it a meal.  Other times we add fresh corn, if it's handy.  Yum!


OK, listen, if you make this, you're gonna love it.  Your whole family will love it.  You will eat it with chips and put it on your eggs, tacos, burritos or anything else you're eating and then try to think of something else to do with it because it's sooooo good, but needs to be eaten right away (within a day or so) because that's why it's called 
Fresh Salsa.

It's a totally different thing than the store-bought jar kind.

It's like the real McCoy, girlfriend!

Oh, and this isn't something that you can save by canning (even though mine is in mason jars), so you've just got to eat it up quick.  But it's so good, that shouldn't be a problem!
