I use whatever I've got handy: wheat/white flour, eggs/ground flax, blueberries/cranberries/raisins/diced apples/bananas/chocolate chips, etc., sugar/honey, milk/water. You get the idea. They are always good and always gone.
Whole Wheat Muffins
mix dry ingredients:
6 C whole wheat flour (fresh ground is best)
3 T baking powder
1 1/2 t salt
1 C sugar
mix wet ingredients:
3 eggs
1 C oil
2+ C water or milk (a little more or less depending on added ingredients)
Preheat oven to 400. Grease muffin pans. Mix dry + wet together gently, just til blended. Stir in fruit at this point, if you're adding any. Spoon into pans. Top with cinnamon/sugar mixture before baking (optional). Bake 15-20 min, depending on how wet the batter was. Makes 36. Taste great. Freeze great.
*if you use honey, add it to the wet ingredients. Measure honey after oil in the same measuring cup. It's alot easier that way.
*ground flax seed can be substituted for eggs. 1 T. + 3 T. water = 1 egg I did that all the time before our chickens started laying.
*4 C wheat = 6 C ground flour, approx. I like red wheat better than white for this. But either is great.
* The batter should be almost like thick pancake batter or cake mix. It varies depending on your choice of ingredients. Feel free to add more liquid if it seems too thick.
*Our family favorites are coconut/chocolate chip, apple cinnamon and of course... fresh blueberry.
*This makes ALOT!
